Today, we have a really exciting dish to share with you. As you know, Guan’s Mushrooms is all about “Bringing fresh ideas to healthy living!” so we reinvented a fun, classic pasta dish.
Instead of using noodles here, we took Enoki mushrooms and made them the star of the dish by making them the noodle! Bear with us because I know this seems unusual but Enoki mushrooms have an extreme resemblance to Capellini Pasta and the taste takes on whatever sauce you add to it.
This recipe is so incredibly easy and is really a delicious, healthy alternative to pasta!
Enoki Pesto Pasta
Enoki Mushrooms / Enoki Pesto Pasta Meal KitServes 1Prep Time: 10 Minutes I Cook Time: 15 Minutes
Ingredients
- 1 package Guan's Enoki Mushrooms
- 1 cup cherry tomatoes
- 2 tablespoons avocado oil
For the Pesto Sauce:
- Small handful pine nuts
- 1 garlic clove
- 1 bunch basil
- 3-4 tablespoons olive oil
- ¾ cup parmesan cheese
- Sea Salt
With the Enoki Pesto Pasta Meal Kit:
- 1 package Enoki Pesto Pasta Meal Kit
- 2 tablespoons avocado oil
Instructions
- To make the sauce, add all the ingredients into a food processor and blend until creamy. Set aside.
- In a medium saucepan on med-high heat, heat up the olive oil and then add cherry tomatoes and let the tomatoes cook down, until the skins are blistered, and they pop open, about 5-8 minutes. Set aside the tomatoes.
- Now, remove the stems from the mushrooms and toss the mushrooms into the same pan that was used to cook the tomatoes (no need to clean the pan). Add a splash of water and cook for 2 minutes. Turn the heat off and stir in the pesto and tomatoes.
- Serve in bowls with extra pine nuts and parmesan cheese. Enjoy!
