By pairing butter beans with our Protein Blend mushrooms, pesto and tomatoes, Marie Reginato has really knocked this one out of the park with the perfect addition to any holiday meal.
Everyone attending will be in for a wonderful surprise with a Baked Bean dish that we can’t get enough of.

Holiday Baked Beans
Protein BlendServes 4-6 Prep Time: 10 minutes | Cook Time: 55 minutes
Ingredients
- 1 tablespoon avocado oil
- 3 cups Guan’s Protein Blend Mushrooms, roughly chopped
- 1 small sprig of rosemary, about 1/2 teaspoon, roughly chopped
- Pinch of pepper
- Pinch of sea salt
- 3 cups cooked gigante style beans, or any white bean
- Nearly an entire 24oz can of marinara sauce (I use a simple one with added basil leaves)
- Handful fresh basil leaves
- 3 tablespoons pesto
- 3 tablespoons feta cheese or goat cheese
- Sprinkling of breadcrumbs
Instructions
- Start by preheating your oven to 375°F.
- While the oven is preheating, warm a saucepan on medium-high heat with the avocado oil. Toss in the mushrooms, rosemary, salt and pepper and warm for about 2 minutes – we are just softening the mushrooms, not fully cooking them. Set aside.
- In an oil coated medium-size baking dish, toss in the beans, marinara sauce, basil leaves and sautéed mushrooms. Mix well so that the marinara sauce coats all the beans and veggies. Bake in the oven for 40 minutes. At 40 mins, take the dish out of the oven and top with the pesto, feta and breadcrumbs. Pop it back into the oven to cook for another 5-10 minutes, or until the breadcrumbs are crispy and the feta is slightly melted. Let cool and serve in bowls when ready! Enjoy!
