Shiitake Bacon MLT

Hello from our team here at Guan’s to you! 

We are so excited to present our very first recipe.

Who doesn’t love a good BLT? Keeping it fresh and light, Marie Reginato and our R&D team collaborated on a modern twist to this classic sandwich, using Shiitake mushrooms instead of bacon.

Shiitake Mushrooms make the perfect healthy substitute to bacon as it keeps that umami flavor we are all yearning for. We paired these crispy little morsels with an avocado-cilantro cream sauce, thinly sliced cucumbers, crunchy sprouts, beautiful watermelon radish and freshly baked bread from a local bakery. DELICIOUS!

Perfect on a hot summer day or when you get that nag for something salty yet healthy.

Shiitake Bacon MLT

Shiitake Mushrooms
Serves 2
Prep Time: 5 minutes | Cook Time: 25 minutes

Ingredients

For the Mushroom Bacon:

  • 10 Guan’s Shiitake Mushrooms, de-stemmed and cut into 1/4” slices
  • 2 tablespoons avocado oil
  • 1 tablespoon coconut aminos or tamari (or soy sauce)
  • Pinch of sea salt
  • Pinch of pepper

For the Avocado-Cilantro dressing:

  • 1 avocado
  • 1 tablespoon coconut yogurt
  • 1 handful fresh cilantro
  • Juice of 1 small lemon
  • 1 tablespoon olive oil
  • 1 teaspoon maple syrup
  • Pinch of sea salt

Toppings:

  • Fresh bread
  • Sprouts
  • Radish slices, optional
  • Cucumber, thinly sliced
  • Tomatoes
  • Butter lettuce

Instructions

  • Start by pre-heating the oven to 375°F.
  • To make the mushroom bacon, add the sliced mushrooms to a large mixing bowl with the rest of the ingredients. Mix well, so that the oil and coconut aminos absorb into the mushrooms. On a parchment paper lined tray, spread the mushrooms out evenly, make sure none are overlapping – this will make the bacon soggy. Bake for 20-25 minutes. When the mushrooms are cooked and crisp, remove from the oven and set aside to cool – this is when the mushrooms harden and get even crispier.
  • In the meantime, prepare the avocado dressing. Simply add all the ingredients into a food processor or blender and mix until creamy.
  • To assemble the sandwich, first add a generous layer of avocado cream to the toast, then the cucumber, lettuce, sprouts, radishes and crispy bacon. Enjoy!
