Here at Guan’s Mushroom, we’ve always tried to follow our motto of “Bringing fresh ideas to healthy living!”, which is why our R&D team has come up with a new, innovative twist to wraps.
In place of tortillas, we wrapped our fillings in collard greens instead, which reduces the amounts of carbs you’re eating yet doesn’t subtract from the taste. Inside, we paired mushrooms from our BBQ Blend with hummus, curry powder and quinoa.
It’s both delicious and nutritious!

Curry Hummus and Quinoa Wrap
BBQ BlendServes 2 (2 Wraps)Prep Time: 15 minutes | Cook Time: 10 minutes
Ingredients
- 2 collard greens, washed and dried
- 2 cups Guan’s BBQ Blend Mushrooms
- Pinch of sea salt
- 2 tablespoon sesame oil
- 1/2 bundle of green onions, roughly chopped
- 1 garlic clove, roughly chopped
- 1/2 cup hummus, plus a dash of curry powder
- 1 carrot, shredded
- 1/4 purple cabbage, shredded
- 1/2 avocado
- 1/2 cup quinoa, cooked
- Handful microgreens
Instructions
- To cook the mushrooms, start by warming the sesame oil in a medium sauté pan on medium-high heat. Add in the green onions, garlic, mushrooms, and sea salt and cook until the mushrooms have softened, about 5-10 minutes.
- Use a knife to shave down the stems of the collard greens – making it easier to fold.
- Lay the collard leaf on a flat surface and spread 1/4 cup of hummus near the upper middle area of the leaf. Now layer the remaining ingredients and mushrooms on top of the hummus, dividing each ingredient by two. Now wrap the leaves as you would a burrito.
- Cut each wrap in half and enjoy!
