To cook the mushrooms, start by warming the sesame oil in a medium sauté pan on medium-high heat. Add in the green onions, garlic, mushrooms, and sea salt and cook until the mushrooms have softened, about 5-10 minutes.
Use a knife to shave down the stems of the collard greens – making it easier to fold.
Lay the collard leaf on a flat surface and spread 1/4 cup of hummus near the upper middle area of the leaf. Now layer the remaining ingredients and mushrooms on top of the hummus, dividing each ingredient by two. Now wrap the leaves as you would a burrito.
Cut each wrap in half and enjoy!
